CREAMY RICE PUDDING 
1/3 c. long grain rice
2 1/2 c. skim milk
3 tbsp. sugar
1/8 tsp. salt
1 egg
1 tsp. vanilla
Raisins as desired

In medium size heavy saucepan combine rice, 2 cups milk, sugar, salt. Stir over medium heat until mixture comes to a boil. Reduce heat; cover; simmer, stirring frequently, 25-35 minutes until rice is tender.

Beat remaining 1/2 cup milk, egg and vanilla; stir into rice mixture. Cook and stir until slightly thickened but still loose and creamy, 2-3 minutes. Remove from heat. Serve warm or chilled.
