SHEILA'S BANANA NUT BREAD
Great with butter or cream cheese!

1 1/2 cups all-purpose flour
1/2 tsp. salt
1 tsp. baking soda (baking powder doesn't work! :)
1/2 cup (1 stick) butter
1 cup sugar
2 eggs
3/4 to 1 cup chopped pecans
4 medium overripe bananas, peeled and mashed

Preheat oven to 325°F. Sift flour with salt and baking soda into a large bowl.

Cream butter, gradually beat in sugar. Add an egg at a time, beating well after each addition.

Add mashed bananas, mix well. Blend in sifted ingredients. Fold in nuts.

Poor into greased loaf pan (I use PAM non-stick spray).

Bake at 325°F for 1 hour or until brown and soft in the middle.
