CHILI CHEESE JUBILEE 
1 lb. ground beef
1 (8 oz.) can tomato sauce
1 pkg. chili seasoning
1 (6 oz.) corn chips
4 oz. Monterey Jack cheese, cubed
1 c. sour cream
1/2 c. grated sharp cheese cheddar
2 eggs
2 tbsp. butter
1/2 c. water
1 c. light cream

Brown meat until crumbly remove from heat. Melt butter, saute onion. Stir in tomato sauce, chili seasoning, water. Simmer 5 minutes. Beat eggs, add cream and mix well. Remove tomato chili from heat and add egg cream mixture slowly, stirring constantly. Place half 6 oz. package of corn chips in casserole top with 1/2 of ground meat, add jack cheese, cover with 1/2 chili sauce. Repeat layers and top with sour cream and sprinkle with cheddar cheese and bake at 350 degrees for 25 to 30 minutes.
