PERFECT FRIED CHICKEN 
1 whole (3 lb.) chicken, cut into pieces or 3 lbs. chicken parts
1/2 c. flour
Salt, pepper, and garlic powder to taste
Oil or shortening for frying

In a bag mix flour and seasonings. Place 2 pieces of chicken at a time in the bag and shake to dredge. Put enough oil in pan to halfway cover chicken pieces, and heat oil to 375 degrees. Gently place dredged chicken pieces in the pan and fry until golden brown. Drain on paper towels.

Recipe omits turning the pieces every so often, say 6 minutes per side?, and some additional ingredients in with the flour mixture will "jazz up" the flavor a bit. Strongly suggest using a meat thermometer as a golden brown piece of chicken "could" still be under-cooked inside. I cook to an internal temp of about 160°F, then hold first pieces in the over at 180°F, until all are ready to be served.
