BEST EVER PUMPKIN PIE 
2 1/2 c. pumpkin (1 lg. can)
3 eggs
1 1/3 c. light brown sugar
1/2 tsp. salt
1 tsp. each cinnamon, nutmeg, allspice & ginger
Or 3 tsp. pumpkin pie spice & 1 tsp. cinnamon
2 tbsp. molasses
2 cans evaporated milk
2 frozen 8" pie shells or make your own

Heat oven to 425 degrees. Mix pumpkin and eggs. Then add sugar, salt and spices; mix again. Add molasses; mix. Then add milk; mix thoroughly and pour into the frozen shells or 2 homemade shells. Lower heat to 375 degrees after the first 15 minutes. Continue to bake for 30 more minutes until center is firm. Serves 12.
