CLIFF'S SOUTHERN CREAM CHEESE
CHICKEN
 
The bacon and cream cheese creates a great topping sauce to spoon over cooked chicken!

4 skinless boneless chicken breasts
1 (8 oz.) pkg. cream cheese
4 strips smoked bacon
1/4 cup finely chopped cilantro
1 tsp. course ground black pepper
1 tsp. sea salt

Place individual breasts in Ziploc bag. With a meat tenderizer pound breast to 1/4-inch thickness. Place breasts on wax paper.

Quarter cream cheese and place one section on each breast. Spread out cream cheese as evenly as you can. Spread 1/4 of cilantro onto cream cheese. Salt and pepper each one.

Roll breast with cheese on the inside and tuck ends in. Wrap each with bacon and firmly press seam or attach with a tooth pick to prevent opening.

Preheat oven to 350°F and place chicken into a glass baking dish. Bake for 30 to 35 minutes or until done.

Let stand 5 minutes and serve with potatoes, rice or you favorite sides. ENJOY!
