CHICKEN FRIED STEAK 
1 1/2 lb. round steak, cut into serving size pieces
3 eggs
1 c. flour (more or less)
1 1/2 tsp. salt
1 tsp. black pepper
1/4 lb. crackers, crumbled

Place cut up steak in a bowl of cold water and set aside. Mix flour with salt and pepper in a pie plate. Take steak from water and turn over in flour mixture. Beat eggs in another pie pan. Turn floured steak in eggs, then over in cracker crumbs. Fry in deep fat heated to 350 degrees. Brown on both sides. Don't overcook.

Gravy: Make gravy from residue. Pour off 3 tablespoons fat. Brown 2 to 3 tablespoons flour in same. Stir thoroughly until smooth. Stir thoroughly until smooth. Add 1 cup water. Cook 5 minutes.
