PLAIN PASTRY 
2 c. sifted all purpose flour
1 tsp. salt
1 tbsp. sugar
2/3 c. shortening
5 to 7 tbsp. cold water

Sift flour and salt together. Cut in shortening with pastry blender until pieces are the size of small peas. Sprinkle 1 tablespoon water over part of mixture. Gently toss with fork. Repeat until all the mixture is evenly moistened. Shape the dough into a ball and roll out for a double crust.
