MAMA'S PIMENTO CHEESE 
1/2 lb. Velveeta cheese
2 eggs, beaten
1 stick butter
1 can pimento, already cut up
2 tbsp. sugar
1/2 c. salad dressing

Cut cheese up into bite-size chunks and put in the top of a double boiler with the butter, pimento, and sugar. When the butter begins to melt, add the beaten eggs. Keep stirring the mixture to keep the eggs from cooking too quick or you will have little chunks of eggs in the pimento cheese. You want it to be smooth. Cook the mixture until desired thickness. When it cools, add the salad dressing.
