CARMELAS ITALIAN PEPPERS AND
EGGS SANDWICH
 
2 green peppers
8 eggs
4 oz. Del Monte tomato sauce
2 tbsp. Italian Parmesan cheese
Salt and pepper
2 tbsp. vegetable oil
Hard rolls or French bread

Put oil in frying pan. Heat oil medium to medium-high; braze peppers until cooked and add tomato sauce and cook a few minutes.

Mix eggs, cheese, salt, and pepper and 1/4 cup water in bowl. Add eggs to cooked peppers in fry pan and cook as you would scrambled eggs, stirring until eggs thicken.

Serve on roll or French bread.
