JELLO YELLOW LEMON CAKE | |
1 pkg. yellow (lemon Betty Crocker) cake mix 1 pkg. lemon-flavored gelatin 3/4 c. vegetable oil 4 eggs Prepare gelatin mixture (1 package lemon Jello dissolved in 1 cup hot water). Put aside to cool. Mix the cake with the oil. Blend until smooth. Add 1 whole egg at a time, mixing well, after each. Gradually add gelatin mixture. Blend well. Bake in greased and floured large 9x13 inch pan at 350 degrees until done. Test with toothpick. While cake is baking, mix 2 cups confectioners' sugar with 3/4 cup lemon juice, should be thin. (You can use 1/2 orange and 1/2 lemon, if desired.) When cake is done, punch as many holes in cake as possible. (A cooking fork with long prongs works well.) Pour frosting slowly over cake while still hot. Put back in oven for a minute or so to glaze. Serve warm or cold. |
