PEACH MELBA PARFAIT 
1 (10 oz.) pkg. frozen raspberries, thawed
1 tbsp. brandy (optional)
1 pt. vanilla ice cream
1 (16 oz.) can sliced peaches
4 coconut macaroons, crumbled
Non-dairy whipped topping

Puree raspberries and brandy until smooth. Strain and discard seeds. Layer ice cream, peaches, cookies, and raspberry sauce in 6 parfait glasses or dessert dishes. Top each parfait with whipped topping. Serves 6.
