PEANUT BUTTER CUP MUFFINS 
2 1/4 c. flour
2/3 c. brown sugar
1 tbsp. baking powder
1/4 tsp. salt
3/4 c. milk
2/3 c. chunky peanut butter
1/3 c. oil
2 lg. eggs
2 tsp. vanilla
12 bite-size peanut butter cups

Stir together dry ingredients and make a well in the center. Whisk together milk, peanut butter, oil, eggs and vanilla. Stir into dry ingredients just until combined. Spoon into greased muffin tins, 1 heaping tablespoon of batter. Press a peanut butter cup into center of batter. Spoon remaining batter over top covering candies. Bake 15-20 minutes in 400 degree oven or until done. Yield: 12.
