QUICHE LORRAINE 
Pastry for 1 (9 inch) pie
4 strips Morningstar breakfast strips
1 onion, diced
1 c. Gruyere or Swiss cheese, cubed
1/4 c. Parmesan cheese, grated
4 eggs, lightly beaten
2 c. cream or half & half
1/4 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. white pepper

Preheat oven to 400 degrees. Bake pastry for 5 minutes. Cook strips until crisp, remove from skillet. Cook onion in remaining fat until transparent. Sprinkle onion, crumpled strips and cheese over pie crust. Combine eggs, cream, nutmeg, salt and pepper and pour over cheese. Bake at 350 degrees for 25 to 30 minutes. (Knife inserted in middle has to come out clean.)
