CHINESE PEPPER STEAK 
3 tbsp. fat
3 peppers, diced
3 onions, diced
3/4 lb. steak, diced
1 lg. celery, diced

Sear steaks in fat in heavy skillet. Add the diced celery, onions and peppers. Cook 5 minutes. Add these seasonings:

1 tsp. salt
1/2 tsp. pepper
1 1/2 c. water

Cook and simmer until tender, about 25 minutes. Mix:

3 tbsp. cornstarch
1 tsp. brown sugar
3 tbsp. soy sauce
2 tbsp. water

Add to mixture. Stir until thickened. Serve with rice or mashed potatoes.
