ZUCCHINI CHOCOLATE CAKE | |
1/2 c. soft butter (1 stick) 1/2 c. vegetable oil 1 3/4 c. sugar 2 eggs 1 tsp. vanilla 1/2 c. sour cream 2 c. chopped zucchini 2 1/2 c. flour 4 tbsp. cocoa 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. baking powder 1 tsp. baking soda Mix butter, vegetable oil and sugar. Add eggs, vanilla, sour cream, and zucchini. Mix well and add dry ingredients. Mix. Pour in 8 x 11 inch loaf pan. Bake at 325 degrees for 45 minutes or until cake is done in center. If using self rising flour do not use baking soda. |
