ZUCCHINI-OATMEAL BREAD 
2 c. flour
1 c. oats, (not quick-cooking)
1/2 c. sugar
1/2 c. brown sugar
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. cinnamon
1/2 tsp. salt
3 lg. eggs
3/4 c. oil
3 c. zucchini, grated or pureed
1 tsp. vanilla

In a large bowl, combine flour, oats, both sugars, baking powder and soda, cinnamon and salt.

In a medium bowl, beat with a fork eggs, stir in oil, zucchini and vanilla. Stir in flour mixture until moist. Pour into a large loaf or two small loaf pans.

Bake at 350°F for 45-50 minutes or until toothpick inserted in center comes out clean.
