PEACHY PECAN DUMPLINGS | |
2 (12 oz.) pkgs. frozen sliced peaches, defrosted 1 c. biscuit mix 1/2 c. sugar 1/3 c. chopped pecans 1/3 c. milk 2 tbsp. melted butter 1/2 tsp. cinnamon Pour peaches and juice into saucepan. Cover; heat fruit, steaming hot. Combine biscuit mix, 1/4 cup sugar, pecans, milk, and butter; stir until dry ingredients are moistened. Drop heaping teaspoonfuls of dough onto hot fruit. Mix remaining sugar and cinnamon; sprinkle over dumplings. Cover; steam until dumplings are cooked and fluffy, 10-15 minutes. Serve hot or cold. Yield: 6 servings. You may substitute fresh peaches, sweetened to taste. |
