BRAN MUFFINS 
1 (15 oz.) Raisin Bran cereal
3 c. sugar
2 tsp. salt
1 c. salad oil (Heart Healthy - use Canola)
5 c. flour
5 tsp. baking soda
1 qt. buttermilk (Heart Healthy - sour 1 qt. skim milk with 4 tbsp. lemon
juice)
1 c. nuts (optional)

Mix all together. Fill cupcake tins (with liners) almost full. Bake at 400 degrees for 15-20 minutes.
