GINGERBREAD MUFFINS 
3/4 c. vegetable oil
1/4 c. sugar
3 c. flour
1 1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. cloves
1 egg, beaten or 2 whites
3/4 c. molasses
1 c. hot water
1 1/2 c. raisins, if desired

Combine oil and sugar and mix until smooth. Add eggs and beat well. Add molasses and hot water. Combine dry ingredients and mix with molasses mixture. Fill cups and bake at 375 degrees for 20 minutes.

These are delicious made with whole wheat flour. Use 1/4 tsp more baking powder. Kids love them!
