YELLOW CAKE 
5 lbs. cake flour
6 lbs. sugar
5 oz. baking powder
2 oz. salt

Sift above ingredients once.

1 1/2 oz. vanilla
2 lbs. (4 oz.) emulsifying type shortening
1 lb. milk Grade A
4 lbs. eggs, whole and fresh
3 lbs. (4 oz.) milk

Place all of the first 5 ingredients in a mixing kettle. Add everything except milk. Mix 5 minutes in first speed, using beater. Stop machine, scrape it down several times. Add milk to above in three parts. Mix in low speed for 5 minutes. Scrape down to ensure smooth batter.

Scale 8 inch layer 13 1/2 oz. Bake: 20 to 22 minutes at 375 degrees.
