BREAKFAST CASSEROLE 
1 (24 oz.) pkg. frozen O'Brien potatoes
1 pkg. Eckrich Smokies (cut into small pieces
4 eggs, beaten
American cheese and/or combination Cheddar shredded cheese

In a large skillet, brown potatoes in oil. Fold in Smokies until warm. Fold in beaten eggs, stir until set and cooked. Top with combined American and Cheddar cheese. Place lid on skillet until cheese melts.
