CHOCOLATE MINT SUGAR COOKIE
DROPS
 
2 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
3/4 tsp. salt
1 1/4 c. sugar, divided
3/4 c. vegetable oil
2 eggs
1 tsp. vanilla
1 pkg. (10 oz. or 1 1/2 c.) Nestle Toll House mint semi-sweet chocolate morsels

Preheat oven to 350. In small bowl, combine flour, baking powder and salt; set aside. In a large bowl, combine 1 cup sugar and vegetable oil; mix well. Beat in eggs and vanilla. Gradually add flour mixture. Stir in mint chips.

Drop by rounded teaspoon onto ungreased cookie sheet. Shape into balls and roll in remaining sugar. Bake 8-10 minutes. Makes about 5 1/2 dozen cookies.
