POTATO PUFF | |
1 c. cold mashed potatoes 1/2 c. sifted flour 1 tsp. baking powder 2 eggs, well beaten Mix flour and potatoes; add egg and beat until light. Drop into boiling fat, Crisco or shortening of some kind, a teaspoonful at a time. Cooked eggplant may be substituted for potatoes, using 1 cup eggplant and only 1 egg, beaten. Salt the eggplant when cooking it. If potato needs any more salt, add same to taste. Drop onto brown paper to absorb grease before serving. |
