MA'S SPONGE GINGERBREAD | |
1 c. molasses 1 egg or egg substitute butter the size of an egg 2/3 c. boiling water 1 even tsp. baking soda 1 1/2 c. flour (measured even before sifting) 1 tsp. ginger or a grated nutmeg This is an old recipe. I use a regular tablespoon of soft butter, which looks to me like a medium sized egg. I've also used egg beaters. I dissolve the soda in the 2/3 cup of hot water. And I prefer the ginger for flavor. Bake in 8x8 greased pan at 350 degrees for 25-30 minutes. Delicious! Easy and always comes out moist and good. A good keeper. |
