PLUM PIE | |
1 c. sugar 1/3 c. flour 1/4 tsp. each cinnamon and ginger 6 c. (2 1/4 lbs.) thinly sliced unpeeled plums Pastry for 9 inch double crust pie Combine sugar, flour, cinnamon and ginger in a large bowl. Add plums and toss. Place prepared crust into 9 inch pie pan; spoon in plum filling. Roll out remaining crust and cut into 1/2 inch strips and arrange in lattice pattern, flute edges, sprinkle with a little sugar. Bake in preheated 425 degree oven for 15 minutes, reduce to 375 degrees and bake for 1 hour. |
