1 c. boiling water
1/2 c. butter
4 eggs, room temp.
1 c. flour
Bring water and butter to boil. Add flour. Beat quickly until smooth. Cool slightly. Add eggs, one at a time, beating thoroughly after each. Drop dough, about 2 tablespoons on greased cookie sheet. Bake in 400 degree oven until puffed. Reduce heat to 350 degrees and bake until brown and slightly dry. When cold, cut in half and fill with whipped cream or custard (mix equal parts custard and Cool Whip). Sprinkle top with powdered sugar or ice eclairs with chocolate frosting.
