CORNBREAD 
1 c. yellow cornmeal
1/8 c. sugar (opt.)
1/2 tsp. salt
1 c. milk
1 c. flour
4 tsp. baking powder
1 egg
1/4 c. soft shortening

Sift together cornmeal, flour, sugar, baking powder and salt. Add remaining ingredients and beat with a mixer 1 minute until smooth. Bake in greased 8" baking pan in preheated oven at 425 degrees for 20 to 25 minutes. Serves 9.
