STUFFED EGGPLANT 
2 each egg plants
2 c. bread crumbs
1/2 c. cheese
1 clove garlic
1/4 c. oil
1 each egg
1 lb. ground beef
Salt and pepper to taste

Half eggplants and scoop out centers. Boil shell until tender (10 to 15 minutes). Saute garlic and meat in oil, cubed pulp. Add to bread crumbs, cheese and egg. Mix well. Spoon into shells. Bake 350 degrees for 30 minutes.
