1 env. unflavored gelatin (Knox) 1/3 cup cold water 1/2 cup sugar 2/3 cup light corn syrup (Karo) 1 tsp. vanilla 1/2 tsp. salt Combine gelatin and water in top of double boiler. Stand five minutes to soften. Place over boiling water and heat until gelatin dissolves. Add sugar and stir over hot water until completely dissolved. In large mixer bowl, combine corn syrup, vanilla and salt. Add hot gelatin-sugar mixture. Beat at high speed until light and fluffy, about 15 minutes. Lightly grease a 9-inch square cake pan. Pour in mixture. Let stand in cool place until set, about 1 hour and 30 minutes. Cut into 1-inch squares. Roll in confectioners' sugar. Makes 3 dozen. |
