MORNING GLORY MUFFINS 
1/2 c. raisins
2 c. grated carrots
1/2 c. peeled diced apple
1/2 c. chopped walnuts or pecans
1/2 c. grated coconut
3 eggs
2 tsp. vanilla
1/2 c. melted butter
1 c. granulated sugar
1/4 c. brown sugar
1 c. flour
1/2 c. whole wheat flour
1/2 c. bran cereal
2 tsp. baking powder
1 tsp. cinnamon

Preheat oven to 350°F. Grease 12 2 1/2 inch muffin pan cups.

Soak raisins in hot water for 15 minutes. Drain well.

Combine grated carrots, diced apple, chopped nuts and coconut in bowl. Set aside.

In large bowl, beat eggs until thick and lemon colored. Beat in vanilla, butter, sugar and brown sugar. Mix well. Set aside.

In another bowl, combine dry ingredients. Add carrot and apple mixture.

Combine this mixture with the egg-sugar mixture, stirring lightly, just until flour is moistened.

Spoon batter into greased muffin cups. Bake for 25 to 30 minutes or until muffins test done.

Serve warm.
