MORNING GLORY MUFFINS 
4 c. flour
2 1/2 c. sugar
4 tsp. baking soda
4 tsp. cinnamon
1 tsp. salt
4 c. grated carrot
1 c. raisins
1 c. chopped pecans or walnuts
1 c. coconut
2 apples, pared and grated
6 lg. eggs
2 c. vegetable oil
4 tsp. vanilla

Preheat oven to 350 degrees. Sift dry ingredients together. Stir in carrots, raisins, pecans, coconut and apple. Beat together eggs, oil and vanilla. Stir in flour mixture until blended. Spoon batter into well greased muffin cups, filling to top. Bake for 35 minutes. Let cool in tins on rack for 5 minutes. Recipe can be cut in half. Makes 30 large muffins.
