Prepare one 4-serving envelope raspberry flavored low-calorie gelatin using package directions, but use only 1 1/2 cups water. Mix 1 (1 lb.) can dietetic pack peaches, drained and chopped, with 1 cup gelatin; chill until partially set. Chill remaining gelatin until partially set.
Add 1/3 cup chilled evaporated skim milk and a few drops almond extract to gelatin without fruit. Whip until fluffy. Alternate the 2 gelatin mixture in parfait glasses, ending with whipped gelatin. Serves 6. Each equals approximately 50 calories.
