3 tbsp. butter 3 med. baking potatoes, unpeeled, boiled and diced 1 1/4 c. grated Monterey Jack cheese 1 1/4 c. grated Cheddar cheese 2/3 c. diced tomato 2 tbsp. chopped green pepper 1/2 c. diced avocado 1/2 c. sour cream Melt butter in heavy large skillet over medium to high heat. Add diced potatoes and cook until browned, stirring frequently. Add cheeses, tomato and onion. Stir until cheese melts. Season with salt. Mix in avocado. Top with sour cream. |
