BRAN MUFFINS 
2 1/2 c. whole wheat flour
2 1/2 c. all bran cereal
1 1/4 tsp. salt
2 tbsp. sugar
1 tbsp. baking powder
2 c. skim milk
1/2 c. canola or other vegetable oil
5 lg. eggs, beaten, or egg substitute
1 c. pecans or walnuts, chopped
1 c. honey
2 tsp. vanilla
3/4 c. raisins
2 c. grated carrots
1 c. crushed pineapple (drain first)
2 apples chopped coarsely
3/4 c. chopped dates
12 prunes, cut into sm. pieces
