BRANDIED SWEET POTATOES 
6 lg. unpared, scrubbed sweet potatoes or yams
2 tsp. cornstarch
1/2 tsp. nutmeg
2 tsp. salt
1 c. water
1 tbsp. lemon juice
1/3 c. brandy
1/4 tsp. cinnamon
1/2 c. granulated sugar

About 1 1/4 hours before serving: Cook 6 large unpared, scrubbed sweet potatoes or yams in boiling salted water to cover. Cook covered for 25 minutes or until tender. Drain and cool.

Meanwhile in 1 quart saucepan, mix 2 tsp. cornstarch, 1/2 tsp. nutmeg, 2 tsp. salt, 1/2 cup granulated sugar. Gradually stir in 1 cup water. Cook mixture at low heat while stirring, until clear sauce. Stir in 1 tbsp. lemon juice, 1/3 cup brandy, 1/4 tsp. cinnamon.

Start heating oven to 375 degrees. Peel potatoes, slice crosswise 1/2-1/4 inch thick. Into buttered pan pour on this sauce and bake covered for 30 minutes or until glazed, basting occasionally. When glazed, sprinkle a few miniature marshmallows over potatoes. Broil just until golden. 8 servings.
