MEXICAN LASAGNE 
1 lb. ground beef
1 pkg. taco mix
1 (12 oz.) carton cottage cheese
2 eggs
1 pt. tomatoes
1 1/2 c. cheddar cheese
1 can French fried onions
9 or 10 tortillas

Brown beef, add tomatoes and taco mix, simmer 5 minutes. Stir in 1/2 can onions. While simmering mix 1 cup shredded cheddar, cottage cheese and eggs; set aside. Overlap 6 tortillas around sides and bottom of baking dish, spoon in meat mixture evenly, top with tortillas then the cheese mixture. Spread evenly. Bake, covered, 45 minutes at 350 degrees.

Uncover and sprinkle with remaining 1/2 cup cheese and place remaining onions in center of casserole. Bake, uncovered 5 minutes.
