CHICKEN BREAST MEX | |
6 boneless skinless chicken breasts 1 can chicken broth 2 tbsp. flour 1 tbsp. olive oil 1/2 can Ro-tel tomatoes with green chilies 1 c. fresh salsa 2 tbsp. fresh parsley, chopped 2 tsp. J.D.'s Magic Preheat oven to 350 degrees. Prepare chicken breasts by sprinkling salt and pepper on both sides. Set aside. In saucepan, heat olive oil over medium heat. Stir in flour and continue to stir until smooth, approximately 5 minutes. Add chicken broth, tomatoes, salsa, parsley and J.D.'s Magic. Cook 3 minutes. Place chicken in baking dish and pour sauce over breasts. Cover and bake for 45 minutes. Serve with rice. |
