There are as many ways to make potato salad as there are people, I think. I'm a Yankee; when it comes to potato salad, I like it plain. Simply peel and boil some potatoes in salt water. Drain the water as soon as they have finished cooking. Let them cool and cut in chunks.
Chop 1 onion, 1 pepper, 1 rib celery and chop 1 carrot. Add the vegetables to the potatoes; sprinkle with salt and pepper. Toss with 1 tablespoon of vinegar and put in refrigerator until time to serve.
When ready to serve, mix with enough mayonnaise type salad dressing to coat. You may add anything else you wish. Hard-boiled eggs, radishes, cucumbers, mustard, pickles, relish, paprika and garlic are some of the things people add.
