2 chicken breasts, cut into bite-size chunks Assorted stir-fry vegetables Oil (peanut or vegetable) 4 pkgs. Top Ramen soup mix 1 (1-inch) piece fresh ginger root 2 garlic cloves, minced Broccoli, onion, carrots, snow peas, cauliflower, etc. - cut into bite-size pieces Cook Top Ramen noodles in 6 cups water until done. (Do NOT add seasoning packets at this time.) Drain and rinse with cold water to keep noodles separated. In wok or large fry pan, add 2 tablespoons oil and 1 garlic clove, minced; heat to high heat. Add ginger root; stir fry vegetables until crisp tender. Remove vegetables and set aside. Add 2 tablespoons oil; heat to high heat. In the same pan, add chicken chunks and 1 clove garlic, minced; stir fry until done. To the chicken, add the vegetables. Mix well; turn heat down to medium low. Next, add noodles plus the Top Ramen seasoning packets. Toss and mix very well. Heat thoroughly. |
