APPLE PIE CAKE 
1 1/2 c. Wesson oil
2 c. sugar
2 tsp. vanilla
3 eggs, lightly beaten
3 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 c. fresh apples, peeled and diced
1 c. nuts or raisins (or 1/2 c. each)

Mix all ingredients well in large bowl. Pour into 3 foil, pie pans. Bake at 325 degrees for 35-40 minutes. These freeze well.
