IRISH SODA BREAD 
2 c. flour
1 1/2 tsp. sugar
3/4 tsp. salt
1 tsp. baking soda
1 tsp. caraway seeds; optional
3 tbsp. butter
2/3 to 3/4 c. buttermilk
1/4 c. currants or raisins
Milk for brushing

Heat oven to 375 degrees. Combine flour, sugar, salt, baking soda, and caraway in a food processor or a large bowl. Cut butter into flour until mixture resembles coarse meal. Add up to 3/4 cup buttermilk to make a soft but not sticky dough. Add raisins. Knead dough until smooth, about 1 minute.

Shape into a 5 inch disc and put in a baking pan. Cut in 1/4 inch deep cross in the top. Brush top with milk. Bake until golden, about 35 minutes. Makes 20 slices.
