ORANGE COOKIES 
1 c. shortening
3/4 c. sugar
1 egg, unbeaten
1 c. mashed, cooked carrots
1 tsp. vanilla extract
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt

Cream shortening until light and fluffy. Gradually beat in sugar. Sift together dry ingredients and combine with carrot mix. Mix well. Drop batter by tablespoonful onto greased cookie sheet.

FROSTING:

Combine:

Juice from 1 orange
Grated rind of 1 orange
1 tbsp. butter
Approx. 1 c. sifted powdered sugar
