"GOLD SOFTIES" COOKIES 
1 c. butter
3/4 c. sugar
1 c. mashed cooked carrots
2 eggs
2 c. sifted flour
Dash of salt
2 tsp. baking powder
3/4 c. shredded coconut

ORANGE FROSTING:

1/4 c. butter
1 c. powdered sugar
1 tbsp. grated orange peel
3 tbsp. juice of orange

In large bowl, cream together butter and sugar. Blend in carrots and eggs. Sift flour, salt, and baking powder together and add to creamed mixture. Add coconut. Bake on greased cookie sheets at 350 degrees for 8 to 12 minutes. Frost with orange frosting.
