RAMEN SALAD 
2 tbsp. butter
1 pkg. Ramen noodles
2 tbsp. sesame seeds
1/2 c. chopped almonds
1 head lettuce, shredded
6 green onions, sliced
1 c. shrimp, crab, lobster or chicken

DRESSING:

2 tbsp. granulated sugar
1/4 c. red wine vinegar
1/4 c. vegetable oil
1 tsp. salt
1/2 tsp. sesame oil
1/2 tsp. pepper

Melt butter in medium skillet. Saute the noodles (broken up) sesame seed and almonds until golden brown. Be careful not to burn. Remove from heat and set aside. In a large salad bowl toss lettuce, onions and fresh or chicken.

Combine all dressing ingredients and toss with salad. Serve immediately. (This makes a large salad. I saute the first ingredients, cool and store in airtight container. I mix the dressing and store in a jar. Then I mix smaller salads as needed.)
