SALMON PATTIES 
1 can (16 oz.) drained and flaked salmon
1 c. dried bread crumbs
1/2 c. chopped celery
1/2 c. mayonnaise
1/2 c. milk
1 egg, slightly beaten
1 tbsp. lemon juice
1/2 tsp. salt

Combine salmon, crumbs, celery, 1/2 cup of mayonnaise, milk, egg, lemon juice and salt. Mix well. Shape into six patties and brown on both sides in 1 tablespoon butter or other oil. Combine the following ingredients for a sauce to serve over the patties if desired: 1/2 c. mayonnaise 1/3 c. drained, shredded cucumber
