2 c. pancake mix
2 eggs
1 1/2 c. milk
1 lb. sausage
1/3 c. oil
2 apples

Cook sausage, drain well. Mix other ingredients, add cooked sausage, and pour into lightly greased 9 x 11 inch casserole dish. Slice apples and arrange on top of mixture. Sprinkle with sugar and cinnamon. Dot with butter and bake at 350 degrees for 25 minutes. Serve hot with maple syrup. Quick and delicious for breakfast, lunch or dinner.
