8 c. thinly sliced cucumbers 1 c. chopped onions red pepper (optional) 1 1/2 tbsp. salt 1 c. chopped green peppers 2 c. sugar 1 c. whole vinegar 1 tsp. celery seed Sprinkle salt over cucumbers, onions and peppers. Let set half a day. Meanwhile, in a saucepan, mix together the sugar, whole vinegar and celery seed. Boil and stir 20 minutes or until sugar is dissolved. Drain cukes. Put in 3 washed pint jars and pour dissolved liquid over top. Cover and keep in the refrigerator. Keeps 6 months or longer. Yield: 2 1/2 pints. |
