DOUBLE CHEESE & CAULIFLOWER OR
BROCCOLI
 
1 sm. head cauliflower or broccoli (4 c.)
2 c. water
1 (8 oz.) cream cheese, cubed
1 (5 oz.) jar sharp American cheese spread
1/2 of 2 1/2 oz. jar dried beef, chopped
1/2 c. potato flakes or buds

In large microwaveable bowl, combine vegetables and 1/2 cup water. Microwave, covered 100% for 8 minutes. Stir once. Do not drain; set aside.

In 2 quart micro-safe casserole combine cream cheese, cheese spread, beef, potato flakes and remaining water. (Looks bad at this point but turns out like Black-Eyed Pea Soup). Cook, uncovered for 10-12 minutes or until mixture is smooth and cheeses are melted. Stir well until blended. Stir in undrained vegetables. Cook 2-3 minutes more.

Since microwave ovens vary in power, you may need to adjust your cooking time.
