PEACH PIE 
1 qt. peaches, peeled and sliced
1 c. sugar
3 tbsp. tapioca, instant
1 tbsp. lemon juice
1/4 tsp. salt
2 tbsp. butter
1/4 tsp. cinnamon or nutmeg
Pie crust, unbaked, top and bottom

Combine peaches, sugar, tapioca, lemon juice and salt. Place in unbaked pie shell, top with 2 tablespoons butter and 1/4 teaspoon cinnamon or nutmeg. Add top crust which has "vents" cut in, seal edges. Bake at 425 degrees for 1 hour and 10 minutes.
